CHOCOLATE CAKE
SERVES 7  
  

1 ½     cups sugar

4     or more Tbsp cocoa

1     stick margarine

1     cup boiling water

2     eggs

2     tsp baking soda

½     tsp salt

1     tsp vanilla

½     cup sour milk

2     cups flour

In a bowl put 1 ½ cups sugar, 4 or more Tbsp cocoa, 1 stick margarine.  Pour over 1 cup boiling water.  Let cool.  Add 2 eggs, 2 tsp baking soda, ½ tsp salt, 1 tsp vanilla. Add ½ cup sour milk, 2 cups flour. Bake in 9 x 13 pan at 350°. For 25 - 30 min.~ Darryl

I grew up with 4 brothers and 2 sisters.  My mom could make this cake every day and the pan would be empty by dusk.

SWEDISH KRINGLE


           1     cup flour

                Dash of salt

            ½     cup butter

            1     Tbsp  water

            1     cup boiling water

            ½     cup butter

            1     cup flour

            4     eggs

            ½     tsp almond extract

 

            Frosting:

            1     cup powdered sugar

            1     Tbsp butter

            ¼     tsp almond extract

                Cream

                Walnuts, chopped

                Cherries, chopped (optional)

Mix first 4 ingredients like pie crust and pat into 9 x 13 inch pan.  Add butter to boiling water.  Add flour and cook as for cream puffs until it is smooth.  Add 1 egg at a time beating hard after each addition.  Add flavoring and spread over first mixture.  Bake 25 minutes at 450°. And 15 minutes at 400   °. Cool.

Frost with mixture of 1 cup powdered sugar and 1 Tbsp butter, ¼ tsp almond extract and cream.  Sprinkle with chopped nuts.  Cut into small squares.  Chopped cherries can also be used for garnish.  ~Darryl

This recipe is really rich and fun and reminds me of my mom and grandmother.
