GREEK HOLIDAY BREAD


2     pkgs dry yeast, dissolve in ¼ cup water

1     quart milk

½     lb butter

½     cup sugar

1     Tbsp salt

5     eggs, beaten

5     lbs flour (14-15 cups)

1     cup walnuts, chopped

1     tsp cinnamon

1     Tbsp anise seeds

    Orange peeling (about 1 tsp)

    Sesame seeds

Dissolve yeast in water.  Set aside.  Melt butter in milk, sugar and salt.  Heat together, scald, cool.  Mix 1 cup flour with cinnamon, orange peel, anise seeds, walnuts.  Add yeast to cooled lukewarm milk.  Add beaten eggs, then 1 cup flour mixture.  Add rest of flour, a little at a time till dough is soft and can be kneaded.  Knead well.  Let rise till double, punch down.  Rise again, punch down, shape into loaves.  Place in greased pans, rise, bake at 350 degrees for 30-40 min.  When almost done, add egg wash and sesame seeds, recipe below:

                Egg Wash

Beat 1 egg with 2-3 tsp of water and 1 tsp sugar.  Brush bread with egg mixture 5 - 10 min. Before bread is done.  Sprinkle with sesame seeds.  Return to oven  a few min.  Brush tops again.  Bake till seeds are lightly browned. ~ Pamela Matson

 

 


GREEK TURKEY DRESSING


Grind together: heart, liver, etc.

            3     pork sausages

            3     slices bacon

                ground walnuts, ½ #

            ½     loaf old bread - toasted

            2     cloves garlic

            1     large onion

                grated orange rind, to taste

            ½     teaspoon cinnamon

            2     beaten eggs

            ½     lb. Melted butter  (or less, moisture will be added during cooking)

                salt, pepper to taste


First, grind all ingredients: meats, nuts, bread, onions & garlic. In large frying pan add some butter, then add onions, garlic, meats, salt, pepper & brown.  Add nuts & cinnamon.  Mix several times.  Remove from fire & COOL.

In large bowl, place ground bread crumbs & the contents of frying pan & melted butter.  (If too dry, add more butter.)  Let mixture cool before adding beaten eggs & orange rind.  Mix well.

Rub turkey inside with salt & pepper & stuff with dressing.

* For 20 lb. Turkey: 6 sausages, 6 slices bacon, 1 lb. Butter, 1 ½ loaves bead, ½ lb. Hamburger.  For more dressing, grind more bread than called for.

* I usually use more bread than called for, also less butter.  Don’t get too wet, juices add moisture while cooking.  Also, cooked chestnuts can be added.

1 lb. Butter grade AA unsalted ( I use salted)

½ cup sugar

2 eggs , beaten

5 ½ - 6 cups flour

1 teaspoon baking powder

1 teaspoon vanilla

½ oz. Brandy

½ cup walnuts

powdered sugar

Cream butter & sugar till light.  Add eggs, vanilla, brandy (optional), flour, walnuts. Shape into half-moons.  Cook 350 degrees till light brown.  When cool, dip in powdered sugar.  Store in airtight container.

XAC FUDGE BARS


         ½     cup butter

            1     cup sugar

            2     eggs

            2     squares melted chocolate (cocoa about 3 T)

            1     tsp. Vanilla

            ½     cup flour

            ½     cup walnuts

Cream butter & sugar.  Blend in chocolate, eggs, vanilla.  Beat well.  Add ½ c flour & ½ cup walnuts.  Bake 325 degrees about 15 - 20 minutes.  Add chocolate frosting.

            CHOCOLATE FROSTING

            ¼     cup butter

                vanilla

            3     Tablespoons cocoa (more or less)

                powder sugar

                milk or coffee

STEFATHO (GREEK BEEF STEW)
2     lbs. Boneless chuck beef (beef stew meat)

4     lbs. Small onions

½     cup oil

1     teaspoon allspice

1     small can tomatoes

½     cup vinegar

5     cloves garlic

    salt, pepper to taste
Brown meat slightly in oil.  Add whole onions, allspices in a metal tea ball or tied in a cheesecloth, vinegar, tomatoes, garlic & seasonings.  Add a little water, cover tightly & cook until meat & onions are tender & liquid is reduced to a delicious gravy.  Remove allspice at once.

MELOMAKORANA GREEK HONEY COOKIES
2     cups salad oil

¼     lb butter melted

½     cup orange juice

½     cup white sugar

5     cups flour

3     teaspoons baking powder

¼     cup warm water

¾     cup chopped walnuts

½     teaspoon cinnamon

¼     teaspoon cloves

SYRUP

1 lb. Jar honey

½ cup water

TOPPING

½ cup finely chopped walnuts

Heat oven to 350.  With wooden spoon, combine: oil, butter, sugar.  Mix: baking powder and ¼ cup water.  Stir at once into dough.  Add ¾ cup walnuts, cinnamon, cloves.  Shape dough into ovals.  Ungreased cookie sheet.  Bake 20 - 25 min.  Set for 5 min.  Cool.  Dip in warmed honey mixed with ½ cup water for 1 - 2 min.  Drain, sprinkle with walnuts.  Best served 24 hours after baking.  Store in closed container. ~ Pamela Matson



 


RASPBERRY ALMOND SHORTBREAD THUMB PRINTS


Cookies:

            2/3     cup sugar

            1     cup butter, softened

            ½     teaspoon almond extract

            2     cups flour

            ½     cup raspberry jam

            Glaze:

            1     cup powdered sugar

            1 ½     teaspoons almond extract

            2 - 3     teaspoons water

Heat oven to 350 degrees.  Combine sugar, butter & almond extract.  Beat at med. speed till creamy.  Reduce speed to low, add flour.  Continue beating till well mixed.  Shape dough into 1" balls.  Place 2" apart on cookie sheets.  With thumb, make indent in center of each cookie.  Fill with 1/4 tsp. Jam.  Bake for 14-18 minutes or till edges are lightly browned.  Let stand 1 minute, remove from cookie sheet.  Stir together powdered sugar & 1 ½ teaspoons almond extract.  Stir in water for a thin glaze.  Drizzle over cooled cookies.  Store in airtight containers. ~ PAMELA MATSON



ANZAC BISCUITS


ABSOLUTELY ADDICTING!!  Anzac biscuits were made during World War I.  Anzac stands for Australia, New Zealand Army Corp.    They are cookies made without eggs and will keep for a long time.  Extra crunchy!

            Combine:

            1    cup sugar

            1    cup flour

            1    cup oatmeal

            ¾ - 1    cup coconut

            Melt:

            1    stick of butter

            2    Tbsp maple syrup (can use maple flavored pancake syrup)

            Mix:

            1    Tbsp boiling water

            ½    tsp baking soda

Melt 1 stick butter with 2 Tbsp maple syrup.  When melted, remove from burner.  Mix 1 Tbsp boiling water with ½ tsp baking soda.  Stir into butter mixture  (this will fizz!)

Add to sugar, flour, oatmeal, coconut mixture.  Mixture may seem crumbly - you can add a few drops of water if you like.  Bake on greased cookie sheet 350° till golden brown.  Remove immediately to wax paper.  ~ Jodi Johnson




AlMOND ROCA BARS


1    cup butter

½     cup packed brown sugar

½     cup white sugar

2    cups flour

1    tsp vanilla

1/3     lb.  Dark chocolate (or chocolate chips)

½    cup finely chopped nuts


Mix all ingredients.  Press mixture in 11 x 15 cookie sheet.  Bake at 350 degrees 12-15 minutes.  Melt chocolate.  Spread over baked dough.  Sprinkle with nuts.  Cut into bars while still warm. ~ Pamela Matson




MOM’S BLUEBERRY BEST MUFFINS


½     cup butter

2     cups flour

2     teaspoons baking powder

1 ¼      cups sugar

½     teaspoon salt

2     eggs

½     cup buttermilk (I use regular milk or  can add vinegar or lemon juice to milk also)

1 ½     cups blueberries

2     teaspoons sugar (for muffin tops)


Cream butter & sugar.  Add eggs .  Sift dry ingredients & add alternately with milk.  Add blueberries.  Sprinkle tops with sugar.  Bake 425 degrees approximately 20 minutes.  About 24 muffins.  Optional: add walnuts, raisins, instead of blueberries.

MIXED GREEN & WALNUT/MANGO SALAD

            

         Mixed Greens
            Walnuts
            Honey
            Mango
            Pear
            White wine vinegar
            sugar
            Gorgonzola cheese
            olive oil

Roast walnuts in oven and then cover in honey, separate and put in freezer
until hard. In blender, put in olive oil, white wine vinegar, cut up and peeled mango, and sugar(very little) to sweeten. Mix up. this will be dressing.

Cut pears in thin slices. Mix greens and dressing together. Put
walnuts, pear slices on top. Sprinkle with Gorgonzola cheese.

CHRIS KA BOBS



1/2 c. olive oil
1 T. ground coriander
1 tsp dried thyme

1 tsp salt

Combine marinade ingredients. Add:

Chicken
Shrimp
Mushrooms
Onions
Green & red peppers
Onions
Cherry tomatoes

Soak for a few hours.

  • Next, add 12 or more bay leaves to 1 cup of boiling water. Soak for 2-12 hours.
  • Thread vegi's, meat and bay leaves on skewers, grill over hot coals.
  • At table, brush with Lemon Pepper Sauce:

1/4 tsp pepper
1 tsp salt
1/4 c. lemon juice
1/2 tsp Dijon mustard
1/2 c. olive oil

We rub the lime on the edge of our hand and then put salt on it. Lick salt, drink shot, and then suck lime! Yum!





JELLO SHOTS


1 - 3oz pkg of Jello, your favorite flavor

1 cup hot water

1 cup Vodka

Dissolve jello in hot water. Add vodka. Put in small bathroom cups, chill to set. Squeeze cup from the bottom
  and toss 'em down!
